On a standard "Jacks or better" machine, the main pay table stats you want to look at are the FULL HOUSE and FLUSH payouts. Serious video poker players generally rate their machines based on how these two hands pay out. Say the full house pays 7 and the flush pays 5 (per one credit bet), that's referred to as a "7/5 machine".
What you want to look for is a 9/6 machine. They're really hard to find, but 9/6 is the best payout that a video poker machine can offer and still leave the house with an advantage. The majority of machines are 7/5 or 8/5 these days.

AngrySanta says... If you're having fun, that's the important thing.
If you want to dig further, there's a whole other world of "Expected Value" and "computer perfect play". Back in the late 90's I came across a guy's website, his name was Jim Kelly, AKA Lodestone. He ran a website that listed locations of all the "good" paytables, plus some coupon trading. "Left of the mermaid bar, third machine to the right" kind of directions.
Skip Hughes ran a great mailing list of people who emailed back and forth about casino offers and such, and they teemed up and started a charging a subsciption fee. I was active for a couple of years, but I lost touch with them a few years ago. Great group of people though.
Search for Skip Hughes and Lodestone. Also it's mandatory to plug Jean Scott's book "the frugal gambler" and the follow up "more frugal gambling" whenever I can. She a darling. (link below)
Also Dean Zamzow programmed THE video poker practice program, "Bob Dancer Presents Winpoker" or BDPW. I'm so out of the loop I'm not even sure what games are still available, so it may be outdated.
How many miles did I walk looking for playable machines? That's why I'm so fat, I don't play videopoker anymore!
Good luck! (and don't mention luck around these people, you'll start a 3 day argument)

OK, here is some video poker info that I think you may find useful. (For the record, I like to play the multi-hand video poker. Nickels on 50 and 100 play, quarters on 10 play, and 50c or $1 coins on single hand and triple play.)
When playing Jacks or Better, most paytables are identical except on the flush and the full house. On a full pay machine (over 99%) the full house pays 45 coins on max bet and the flush pays 30 coins on max bet. No matter where you are playing, you should never play at a jacks or better machine that is less than 40 for a full house and 25 on a flush. Some places will really stiff the players and put up a paytable where the full house pays only 30 credits. Stay away from these.
All online casinos with Microgaming software carry full pay Jacks or Better Video Poker and many other high paying variations. You can find these online casinos at http://www.ranked-online-casinos.com/mic…
Good luck whenever you play VP next, whether it is in Vegas or online!
